Notes de dégustation

Eye: Clear, light amber with golden flecks.

Nose: Orange spiced tea, fresh cut apples, and cherries first. The nose does not overpower.

Palate: Delicate floral flavors, with sleek notes of vanilla, the wood tied powerfully well, a fine interplay of fruit and acidity laced with a touch of licorice. A finesse to the Cognac for its age, with a lengthy finish.

Description

The youngest Cognac of the Delamain range aged for 25 years

Although it might be the youngest of the entire Delamain range, the Delamain Pale and Dry XO has been matured for a quarter of a century to produce a very fine and elegant Cognac. With a distillate from Ugni Blanc and Colombard grapes, it comes from the Grande Champagne - also known as the Premier Cru. 

Aged on average for 25 years, the Pale & Dry XO Cognac is known for its pale color that is much lighter than you'd expect of a Cognac of this age. This is due to the natural phenomenon of the eaux-de-vie being matured in very old casks. The word 'dry' is somewhat of a paradox, because it's actually referring to the natural sweetness of the liquid.

The end result, however, is a Cognac that's truly round, intense, and mellow. It offers a real depth of character, combining delicacy with amazing fruitiness. If you enjoy a Cognac that's truly flavorsome, with good rancio, then give this one a try. A pure Grande Champagne blend, this is certainly a bottle that will hold its head up high at the smartest of gatherings.

They mature under optimal conditions in old barrels. The distillation is carried out gradually. Eaux-de-vie of the same age is then blended. The four factors all play a significant role - 25% being the distillate; 25% the barrel; 25% of the cellars and 25% the time taken. A fine assemblage aged over many years.

How to serve

Enjoy this Cognac at room temperature as a digestif or with a cigar.

Presentation of the Pale and Dry decanter 

The bottle is a true ode to the Delamain Cognac savoir-faire, with a beautiful illustration adorned across the label. The bottle itself features an etching of a seal into its neck, and arrives in an equally as intricate presentation box.

This bottle can also be bought in bottle sizes of 300cl and 20cl.

Amazing

I got this on the day of French Bastille Day. :)

Amazing that there were No color and No sugar added!!
A true “pure” aged cognac.

BOUQUET: sweet caramel with oak.
TASTE: silky grapes.
FINISH: lingering orange.

The most recognizable cognac

The most recognizable cognac for all I tried.

Appearance: light, amber gold.

Nose - dried fruits, vanilla, camomile.

Palate - rich, juicy, bright and a bit spicy. Deamain's solution for eau-de-vieux assemblage works just fine.

Finish - medium, inspiring for another sip.

Good with coffee (arabica), Cohiba cigar (Siglo series IV and VI) and dark chocolate.

Worth it's money and good for permanent consumption.Very remarkable spirit of it's kind.

Outstanding XO Cognac!

Until recently I was a VSOP drinker, but after reading many of the reviews posted here, I decided to expand my horizons to XO, Napoleon, and Extra. By way of comparison, I have tried and reported on Remy Martin XO, Courvoisier Napoleon, Daniel Boujou VSOP and Daniel Boujou XO, Frapin VSOP, and finally the present subject of my tastings.

The present offering is the most unusual in color. Most of the XO and Napoleon Cognacs seem to be much darker gold or amber in color. As stated in the distiller's promo, this is unusually light--I would call it "bright."

The nose is excellent and very "fresh," with some floral and fruitiness, but as an overlay to a nuttiness reminiscent of hazelnuts.

The palate is exciting! Very full but complex.

Finish is long and very smooth. I detect some spiciness and vanilla. Nutmeg? Perhaps. Not too much oak which can subtract if overdone.

Although a tad more expensive than I like, it delivers quality from start to finish. No real weaknesses.

Very pleasing Grande Champagne

The first thing one notices after pouring a measure of this wonderful Cognac into a tulip glass is the color, which is a light golden tone, rather than the deep amber of many other brands of similar age and composition. The nose is lighter and reminiscent of spring orange blossoms, and a definite absence of any oak tones. The liquid flows smoothly onto the tongue with nary a trace of bite. A very smooth and enjoyable taste of ripe plums and pears, with an undertone of a bit of vanilla. The finish is long and complex--satisfying. Faint hints of oak, and vanilla. One of the nicer Cognacs I've tasted recently.
