This Cognac house favors artisanal quality over producing the same spirit again and again. Philbert works in harmony with nature and the geological makeup of the soil all the way from the vine to the bottles themselves.
Philbert, a Cognac house of two brothers were the first in the region to use rare cask finishes in Sauternes casks. They took over the family estate in 2006 and introduced innovative new methods. By 2012 they had tripled the area of vineyards. This time, they distill the Rare Cask Finish Sauternes 2014 Cognac with grapes from the Petite Champagne. The production of Sauternes wine is linked to the Botrytis fungus, known as a noble rot.
The region grows foggy in autumn when the grapes are harvested, and the River Ciron has cold water which flows into the Garonne which is a lot warmer. The fog is then formed over the hills of the Petite Champagne and the grapes grow here; the moist air is perfect for this fungus.
The rot decreases water content in the grapes, and instead it is turned into sugar. Once the grapes are frozen and pressed, the Sauternes wine is matured in oak casks for 18 to 36 months, creating a fruity cask. Once this rather complicated method of creating the casks is complete, the Cognac is distilled over lees with grapes from the Petite Champagne, and finished in the Sauternes casks. All of these factors contribute to the unique qualities of the Philbert 2014 Cognac.
Instead, The Cognac is proofed at 41.5% ABV, in a whiskey-style 70cl decanter.
