Domaine de Birius VS Cognac: a Shimmering Expression of the Petite Champage
This blend has been created to be consumed on its own or as an aperitif, perfect for long summer days. Aged for over five years, Domaine de Birius VS Cognac is made exclusively from Ugni Blanc grapes sourced from the grassy limestone hills of the Petite Champagne region, grown using sustainable viticulture. The eaux-de-vie have been distilled on the lees for a wonderful depth of flavor, enhanced by the maturation process in Limousin oak which exceeds what is required by law for a VS Cognac. It has been made and bottled at the property by the Bouyer family, owners of the estate. The result is wonderfully fruity and vivacious with an abundance of vanilla notes.
Covering 23 hectares of Petite Champagne vineyards at Biron in the Charente Maritime, the House of Cognac Birius is run by Anne and Philippe Bouyer, direct descendants of the original vineyard owners. The Domaine de Birius vineyard enjoys an ideal exposure with maximum sunshine and low summer rainfall. It covers 33 hectares of vines in Petite Champagne (2nd cru of the Cognac appellation characterized by clay-limestone soils on soft limestone subsoil). This favorable situation allows the range of grape varieties that grow here to express an exceptional potential for creating sumptuous Cognacs as well as wines, liqueurs and Pineau des Charentes.

How to Enjoy Domaine de Birius VS Cognac
While this is a great VS Cognac to drink over ice in a tumbler glass, its floral and fruity palate is complemented perfectly in a Vineyard Spritz:
- 30ml Domaine de Birius VS Cognac
- 15ml Elderflower cordial
- 10ml Lemon juice
- Champagne (to top)
Combine the first three ingredients in a cocktail shaker with ice and shake hard for 30 seconds. Double strain into a wine glass, then add ice and top with Champagne. Garnish with a lemon twist and a sprig of mint.
