Description
The Perfect Expression of the Premier Cru: Delamain Vesper Grande Champagne Cognac
With its XO age (around 35 years) and eaux-de-vie cultivated from the premier cru, Delamain Vesper Grande Champagne Cognac is a culmination of the most celebrated characteristics in a high quality Cognac, with its rich history and heritage further reinforcing its superior standard and unique yet classic flavor profile. With roots dating back to the early 1600's, Delamain are famous for their high quality and their popularity amongst the British aristocracy since the Maison was founded in 1762.
The royal blue design of the Vesper Grande Champagne Cognac is not only synonymous with quality, but with opulence and rich flavors that are perfectly suited for those refined palates of High Society. Harnessing the intense aromas of the Limousin casks it is matured in for a minimum of 10 years, this XO is powerfully perfumed with woody notes, with scents of underwood, dry vine shoots and vanilla permeating through this fragrant forest.
These earthy tones are complemented and balanced by an intense fruitiness on the palate, with the mellow rancio acting as a catalyst to the marriage between the underwood aromas and fruity flavors, a sensory explosion with every sip. Those more refined palates may also detect a hint of salted caramel, clove and cinnamon sneaking onto the taste buds before an exceptionally long finish. The perfect expression of a Grande Champagne XO Cognac, what makes Vesper unique is the craftsmanship and traditional techniques used in its production.
In a trick process known as "marriage", each eau-de-vie is aged in a separate barrel. When they are eventually brought together in a large Limousin cask, the blend is brought to 40% ABV through the slow addition of very old, weak Grande Champagne eaux-de-vie of around 15%, known as "vieilles fables". A difficult process that requires skill and patience, lowering the alcohol content of the blend without compromising on flavor. The concept of Vesper was first launched in 1953, and today it is a popular choice amongst fans of the Fine Champagne region.
Its woody notes make it a firm favorite amongst Cognac connoisseurs the world over. Crafted in a classic way, this full-bodied and well rounded Cognac delivers an excellent finish with remarkable smoothness and length.

How to Serve
This XO can be served with a variety of sweet or savory dishes, its earthy notes would complement a foie gras or strong cheese board perfectly, or equally contrasted a rich-textured chocolate dessert. Serve this Cognac neat or over ice as a delightful digestif.
Presentation of the Bottle
Standing proud with a beautifully slim bottle, the label features the marks of a cellar engraving from 1790 by J.H de Boissière. The design is the embodiment of excellent, beautifully showcasing the deep golden tones of this rich and complex XO. The bottle features a royal blue stopper and comes with a matching cardboard presentation box, for storage and gifting purposes. A true seal of approval and hallmark of quality, the glass bottle is embossed with the Dalaman Cognac seal, replicating those wax seals placed on the French Limousin oak casks used in the Cognac's maturation process.

Cognac in its purest form.
This is a WORLD CLASS Cognac. Delamain produces some of the finest Cognacs on the planet. The Vespers is no exception. With no additives (legal or otherwise) this is a work of art. One reviewer said the flavor was "muted." I can only assume that is because we have become accustomed to overly sweetened...
An old friend
This is a cognac that is like an old friend. But it is quite a long time since I tasted it last time. This cognac has a nice golden color. It is quite woody on the nose followed by leather and tobacco tones. It is delicate in the mouth. Fruity and spicy tones are occupying the mouth. This is a full-body...
An excellent change of pace
This isn't something I have been able to get in my area before - after a lot of consternation, I pulled the trigger and incredibly glad I did. The nose is sweet casually but when you take a solid whiff, you get some spice in there. It almost has a tobacco type of lingering scent, nearly a cologne...
