NeatBeyond XO
The oldest and rarest tier of Cognac. Blends in which the youngest eau-de-vie has aged far beyond the ten years required for an XO, often averaging 30, 40 or 50 years in French oak.
Cognac is sold in age tiers, and the stated age always refers to the youngest eau-de-vie in the blend. VS means at least two years, VSOP at least four, and XO at least ten. Hors d'Age is officially classed alongside XO, but the houses use it for something quite different: a blend whose youngest spirit is already a decade old, built around eaux-de-vie that have rested in oak for several decades. It is the natural neighbour of XXO, Extra, Ancestrale and Prestige Cognac.

Why it stands apart
Unlike whisky or rum, Cognac is double distilled from wine, not from grain or sugar cane, and it is matured only in French oak. Where most spirits reach their peak in one or two decades, a great Cognac keeps developing for half a century or more. Long ageing brings the rancio charentais, a savoury walnut and dried-mushroom depth that only the oldest spirits reveal. A Hors d'Age also differs from a Vintage Cognac: a Vintage is the eau-de-vie of a single harvest year, while a Hors d'Age is an assembly of many years and often several crus.
The official rules
Every bottle we sell follows the cahier des charges of the Cognac AOC, the official specification overseen by the INAO and the BNIC:
Age is tracked through the compte d'age, a count that starts on 1 April after distillation. Since 2018 the minimum for XO is ten years (compte 10), and the official count stops there, so older spirits are released as Hors d'Age, Extra or Ancestrale. Read our guide to Cognac age statements.

Craft
A Hors d'Age is the work of the cellar master (maitre de chai). The oldest eaux-de-vie rest in the paradis, the most precious corner of the cellar, often moved into glass demijohns once the spirit can take no more from the oak. Each year a little evaporates, the part des anges (angels' share), quietly concentrating what remains. Serving
Serve it neat, at room temperature, in a tulip-shaped glass that gathers the aromas. There is no need to warm or dilute a spirit this old. Let it open in the glass and reveal its layers of dried fruit, candied orange, leather, tobacco and gentle spice. A Hors d'Age is made for slow sipping, an after-dinner moment or a special occasion.
Good to know
Officially the youngest eau-de-vie must be at least ten years old, the same minimum as XO. In practice Hors d'Age blends are built from much older spirits, commonly 30 to 50 years and sometimes well beyond.
It is older. XO guarantees a ten year minimum, while Hors d'Age signals a clear step up in maturity and complexity. Whether it is better is a matter of taste, but it is certainly rarer and more concentrated.
Expect a deep amber colour and aromas of dried fruit, candied orange, leather, tobacco and spice, with the savoury rancio that only very old Cognac develops, all on a long, soft finish.
A Vintage Cognac comes from a single harvest year, while a Hors d'Age is a blend of many years and often several crus, assembled for balance and depth.
Store the bottle upright, away from light and heat. Serve neat at room temperature in a tulip glass. A well-sealed bottle keeps its quality for years.
