Origin: From the Hills of Bourgogne to Your Glass
The heart of Domaine La Croix Montjoie lies in its deep-rooted connection to the Bourgogne region. Founded in 2009 by Sophie, a winemaker's granddaughter and agronomist, and Matthieu, an oenologist, the Domaine is situated in the former farm of the village castle. The Domaine's name, La Croix Montjoie, is derived from the Montjoie Cross, marking the first sight of Vézelay for many a pilgrim. Today, the Domaine's terrace overlooks the enchanting foothills of the Morvan, painting a captivating picture that serves as a constant reminder of the magical, indelible spirit of the region.
Production Process: Crafting an Artisanal Masterpiece
The production of the Marc de Bourgogne is a meticulous process that begins with the distillation of the Domaine's grape residues or "marcs" - a mix of grape skins, seeds, stems, and leftover grape juice. This distillation is carried out by traveling distillers, one of the few remaining in the region. Post distillation, the spirit is aged in old ex-Chardonnay oak barrels for a period of 10 years in the domaine's cellars. With only about 200 liters produced each year, this marc is a rare, authentic treat from Bourgogne. It retains its natural color, is unchill-filtered, and undergoes no reduction, making it a "real vigneron’s marc."
