Nose: Not immediately obvious as a tomato liqueur - traces of tomato, like the liquid recovered when draining tomatoes of their water. Ripe, almost sweet.

Palate: Sweet initial attack - a good reminder that tomatoes are fruits after all. Slightly acidic and quite savory. Slightly bitter finish. A very pure natural tomato flavor, but nothing exaggerated or tomato sauce-like. Fascinating but definitely one to pair with all sorts of different dishes

The distillery, currently led by Laurent Cazottes, honors the biodynamic principles and practices set by the Nature & Progrès association, thereby ensuring the purity of taste in each product.

Production Process: Harnessing the Purity of Tomatoes

The Liqueur de Tomates follows an intricate process that begins with the handpicking of tomatoes at their optimal ripeness. Harvesting continues until all varieties reach their peak flavors. Each tomato is carefully cut into quarters and then macerated in an organic house brandy for several months. This long period of maceration allows the tomatoes to infuse their unique flavors into the brandy. The result is an 18% strength liqueur that captures the vibrant taste of ripe tomatoes. Enjoy this liqueur slightly chilled as an aperitif or get creative with your pairings during a meal.
