Aged on average for 25 years, La Maine Castay XO Cognac is a prime example of a high quality XO from this region. The presence of the red partridge on site (which incidentally features on the company’s logo), testifies to the quality of their cultivation methods. The chalky soil of the region usually produces a delicate aroma of freshly pressed grapes. However, this Very Old Cognac initially introduces an intense nose, with a second nose rich in dried fruit, including prunes and dried figs. Finally, aromas of cocoa and roasted spices round off this classic Cognac.
