Nose: fruity/floral welcomes us, but with an affirmed character. The 1st nose, intense, powerful, and sharper, comes from several citrus fruits (orange, lemon, and their peels). The 2nd nose plays the card of the fruit basket/pastry. All in all, nothing more classic: the signature of the prunelard coupled with the terroir element.

Palate: suave and acidulous, but also the prelude to greediness. Based on pastry and confectionery flavors. The fruity and the floral add their forces.

Finish: sweetness.

Description

An Eau-de-vie made from an old Gaillacois grape variety reintroduced by the Plageoles family, the grapes are harvested after passerillage. Passeriallage is the procedure of air-drying grapes after the harvest to enhance their sugar content. It is the ripe skins and flesh that, after a long natural fermentation and a gentle distillation, give their deep and subtle aroma to this eau-de-vie.

Intense straw yellow color. It is bright, luminous, and limpid. The mottled reflections undulate between golden and green tints where silver nuances also appear which denote its age. This vinous, highly aromatic eau-de-vie is distinguished from other grape eaux-de-vie by its spicy flavor.
