Nose: the first nose, we perceive its amplitude, its complexity, which combines concentration/freshness/unctuousness/generosity/density/mellowness. The second nose reveals a multitude of fruity/floral scents, through which discreet flavors of old-fashioned pie with brown sugar can be detected. Beyond these primary observations, it develops like a metronome.

Palate: fat, rich, greedy, unctuous, aromatic, serene, lively. Melting, even stewed fruits. Essential essences of bergamot, jasmine, fern, and citrus peel.

Finish: spherical and long, is marked by a refreshing minerality. It slides on a base of beautiful bitters.

Description

"... in a dress of clouds, with a diadem of snow" it presents itself to us. It is limpid, brilliant, and luminous. And these reflections are those that the light agrees to give this beautiful Eau-de-vie de Reine Claude Dorée.

To improve the flavor of their plums, after the harvest, Distillerie Cazottes carries out a passerillage on a rack. Passeriallage is the procedure to air-dry grapes after the harvest to enhance their sugar content. All the tails and all the stones are eliminated to obtain the frankness of the fruit. They are then, only flesh and skins. After a long fermentation, a fine but deep perfume of golden Reine Claude freezes.

The soft and precise distillation amplifies its aroma. The tasting breaks down the purity of the flesh and then the skin in length.
