Eye: Pale amber

Nose: Very complex with multiple layers, a subtle smokey and meaty aroma is penetrated with fruity, herbal and sour notes. There is an underlying scent of vanilla, with cooked banana, bitter orange peel and ripe pineapple.

Palate: Dry on the palate with a floral and fruity combination of rose water, pear, white grapes, apricot and apple-cinnamon. Following this, flavors of coconut milk, bread, nuts and allspices emerge to leave us with a long and spicy finish on ripe fruit.

Plantation Xaymaca Special Dry Rum

Maison Ferrand owner and Master Blender, Alexandre Gabriel works closely with distilleries across the Caribbean and Americas crafting rums, ensuring they are allowed to mature in warm Caribbean cellars for the initial part of their life. For the second stage of the process the rums are shipped to Cognac where they are further aged in French Oak casks. This traditional process is unique to Plantation Rum and produces lively, full bodied Caribbean rums enhanced with double ageing.

With the Xaymaca Special Dry, Alexander Gabriel is fulfilling his long-held dream to produce a 100% pot still rum that brings back the quintessential Jamaican style of the 19th century. The rum is made with a blend of spirits from Long Pond and Clarendon distilleries. Xaymaca (pronounced zay-muck-uh), is the original name for Jamaica that the indigenous Arawacks, who inhabited Jamaica well before Columbus, gave it. Xaymaca means ‘land of wood and water’.

This blend has it all, it is what would be called a ‘heavy rum’ in relation to its depth and will be easy to drink for anyone who enjoys whisky and the Islay region. Despite the extra portion of sugar this rum keeps to its ‘extra dry’ name, along with a subtle smoke this is perfectly Jamaican. The expression of intense aromas and flavors such as black banana and flambéed pineapple reveals to us the legendary ‘Rum Funk’, with just a touch of French elegance on top.
