Solid XO

Bertrand is a producer that doesn't get the attention they deserve. We visited them in 2017 and discovered their range. The traditional range is a bit commercial, and easy to like. And then they also have a range of special products more for the enthusiasts.
This XO has an age around 35 years, and it is supposed to be the same blend as the carafe XO as soon as the batches are aligned. This XO has an ABV of 42%. It has a nice golden color and offers delicate aromas. I find tones of elegant wood, coffee, chocolate and some licorice. It is quite smooth in mouth despite the increased ABV. Sweet spices occupy the entire mouth. In addition, there is also tones of wood. I really enjoy the extra percentages. It is a very pleasant cognac. The finish is both rich and long. For me this is a cognac I wouldn't hesitate to serve in any occasion. And I think I prefer this over the carafe XO.

A small sip: Allow your taste buds in the various areas of your mouth to distinguish the different flavours. This part of cognac tasting is described as ‘the palate’. Don’t just swallow it down; allow the liquid to touch all the regions of the mouth. Doing this is necessary as the taste buds pick up contrasting flavours in the different areas of the mouth; on the tip of your tongue to the sides, for example. Take a tiny sip to prep your palate for the sensory experience to come. Take a second larger sip, and gently roll the cognac around, etting it come into contact with every corner of your mouth. Focus on the perceived textural sensations. Are the sensations round and rich or fresh and elegant? Is the overall mouthfeel intense, balanced, disjointed, or lacking presence? In short, how does the cognac feel in your mouth?
