Gin Osmoz "Finish" in Pineau Barrell is a unique gin offering that spent its aging process in old oak barrels that once contained Vieux Pineau des Charentes Blanc. Before the production process began, two very old Pineau barrels were selected in order to refine the existing Citrus and classic gins by Chateau de Montifaud. By moderating the barrels in which the gin is aged, Elodie Vallet was able to also moderate the aromatic palette of her gins while preserving freshness:
"I wanted an aged gin with sweet notes and a nice roundness in the mouth. This is why we worked with barrels of old Pineau des Charentes."
Due to the chalky land content and prominent limestone in the Petit Champagne region, high-quality eaux-de-vie is almost certainly guaranteed from the likes of Chateau de Montifaud and other houses in this terroir. Owned by the family Vallet for six generations, Chateau de Montifaud Cognac boasts 125 hectares of vineyards that are located in both the Grande Champagne and Petite Champagne growing regions. The house produces a large, high quality range of cognacs – including various vintages from years that have had an exceptional harvest. One family tradition that Cognac Chateau Montifaud is proud to follow, is that of when a new baby boy is born to the head of the cognac house, that part of the cognac created from that year’s harvest is set to one side. This is kept for a varying number of years, but may only be sold by future generations.
