Production Process: Tradition Meets Perfection
This Eau-de-Vie Reserve de Famille Poire Williams begins with the rigorous selection of the finest fruits at optimal ripeness and perfect health. Once approved by the Master Distiller, these fruits undergo fermentation for up to six weeks under the action of the fruits' natural yeasts. Thereafter, the double distillation process takes place using traditional copper alambic Charentais, a process crucial to the final quality of the product. After distillation, the eau-de-vie is aged for 8 years in dame-jeannes in the attic, a practice that aids in the evaporation of the esters and keeps the brandy's aroma and color pure and clear.
