Nose: complex aromas of both fresh and ripe apples

Palate: very clear but dry, long-lasting in the mouth with some return

Description

For the first vintages of this stunning Eau-de-vie de Pomme Gueule 10 different varieties of apples are purchased. The apple varieties are organic and biodynamic. Crimson, Red Devil, Krown, Topaze, Ecolette, Santana, Joseph, Reinette d'Anjou, Pinova, and Elstar are the chosen ones for this Eau-de-vie.

Distillerie Cazottes uses all of their 19 varieties planted on the estate, which are also grown biodynamically. The apples are placed in trays, then stemmed, crushed, and put in fermentation without any oenological or artificial addition. The distillation is then slow and careful optimizing the toasting cores in order to keep all the aromas of the fruits. The ageing is done in glass Dame Jeanne and the brandy is bottled as and when required.

With its 45% vol, it pairs wonderfully with pies, cheeses, and granita.
