Nose: The 1st nose sets the frame and the direction. The 2nd nose gives the focus and depth. The pear unfolds and establishes itself as the dominant theme highlighted by the quality of the fruit (mellowness) and of the distillation.

Palate: fresh, peeled to sharp, associated with citrus fruits (flesh) and white and yellow fruits, with a slight compote base. Fatty and pastry characters evolve along the way.

Finish: unfolds pear notes, confectionery, candied fruits, and bitters such as bergamot and lime.

Description

Distillerie Cazottes eliminates the tails (peduncles), the eyes (calyxes), all the seeds and the escarres or doubtful evolutions of the fruit, in order to preserve the flavor of the pear.

Discernment and cleanliness go hand in hand during the crushing process in order to promptly start the fermentation process. Without artificial additions, the metamorphosis of the aromas and sugars is accomplished over six weeks. Over time this bottled combination of flavors becomes quality. The know-how combined with the still of Distillerie Cazottes completes give you the "spirit of williams pears".
