With decades of maturation, the Armagnac Jean Cavé Brut de Fût 1960 has developed an exceptional depth of flavor that can only come from delicate, extended contact between spirit and wood. Made from Ugni Blanc grapes and distilled in a continuous copper still, this is a traditional single vintage Armagnac. The casks used for maturation have been made from a particular wide-grained variety of oak found in the Gascon forest, toasted to a medium char to develop rich sweetness and tannins. Selected from an early age for their exceptional qualities and raised with very particular care, Jean Cavé vintage Armagnacs have not undergone any blending, making each release characteristic of a single harvest year.
Armagnac is a grape brandy produced in the Gascony region of south-west France, between the Adour and Garonne rivers by the foothills of the Pyrenees, as it has been since at least the 15th century. Here, the sand and clay terroir spreads across rolling hills drenched in sunshine during the long summer; the flavorful grapes harvested across this region produce particularly acidic wines, perfect for distillation. However, it is the job of the Cellar Master to ultimately choose the best vintages, nurture the casks - sometimes handing them to the next generation - and select the perfect combinations for blending.
Monitoring the cellar environment is a central part of ensuring that the Armagnac matures correctly; luckily, the Maison Jean Cavé cellars benefit from stable humidity and temperatures thanks to an ancient waterway that passes under the floor. With this advantage, the casks here can rely on steady maturation year-round. Each release is bottled in the cellar, which means you taste each drop precisely the way it was intended. This natural cask-strength edition has not had any water added and is presented at 43.5% ABV.
Under the watchful eye of Henri Cavé, the fourth generation of the family, the team at Jean Cavé work with years of skill and passion behind them. As guarantors of the estate, they make sure that Armagnac is made here the same way as it was in the 19th Century.
