Nose: Very aromatic, the nose combines a certain sweetness with some measured peppery notes.
Palate: The louche is quick and becomes a very thick light green color. Mouth Diluted to 1.3. An impression of dryness that is rarely found in absinthes surprises the taste buds at first. Then, the Veronique announces a whirlwind of flavors that seem sharp at the beginning, and that get rounder as time goes by. The palate is soon taken over by fruity fennel, coriander (and its little peppery taste), cleverly tempered by notes of green anise that leave the absinthe to impart a slight bitterness.
Finish: It is the bitterness that remains in the mouth and while we were not expecting it, notes of licorice come back little by little to persevere.
