Eye: Solid bronze with amber reflections. 

Nose: Soft pears accompanied by wildflowers and some warm spices. Given time, the aromas develop into notes of dried apple slices and raisins. 

Taste: Well-structured with roundness on the palate. The smoothness appears when the glass is sufficiently warmed.

Fruits of the Fins Bois: Pierre Croizet La Carafe XO Cognac

This beautifully presented Cognac has been aged for a minimum of six years, but in classic Fins Bois style, shows a maturity beyond its years. The Pierre Croizet La Carafe XO Cognac has been made exclusively from eaux-de-vie sourced from the Fins Bois region, where the Pierre Croizet Cognac estate spans some 30 hectares. This growing area is covered by clay and chalk soils known as groies, similar to the Champagne regions but with a different composition. The heavy soil is around 60% clay, known for producing round and supple Cognacs that rapidly mature in the cask, while also maintain an authentic fruity character. 

The Croizet family have always passed down knowledge from father and mother to daughter and son, keeping their skills a closely guarded secret. With a fighting spirit to survive, they have overcome many challenges over the years - not least the Phylloxera epidemic of the 1870s, when Amelina Croizet was pivotal in ensuring that the family’s vineyards survived. Over the years, one thing that has remained constant has been to keep the traditional methods firmly in mind, whilst also advancing the Cognac making process.

Today, the family company is in the hands of Leopold Croizet, the latest in a long line of grape growers. Passionate about expanding further, he has acquired further vineyards stretching beyond the Fins Bois region into Petite Champagne - creating potential for a whole new range of eaux-de-vie with a wider appeal. Regardless of where they harvest their grapes, however, Pierre Croizet Cognac only use organic fertilizers on their land, keeping firmly to the traditional methods of their ancestors.

How to Enjoy Pierre Croizet La Carafe XO Cognac

This delicious XO is best enjoyed neat or with a dash of water to further open up its complex tasting profile. Pour into a tulip glass and allow the nose to open out at room temperature over 8-10 minutes - you’ll find this Cognac develops quite well as it warms up.
