Pasquet Christmas XO Cognac
Certified organic Cognac house Pasquet has released its own Christmas edition XO Cognac. The XO Cognac, aged for over a decade, is produced using only the finest eaux-de-vie from the premier cru of Grande Champagne. Cultivated through organic farming methods and always made with sustainability in mind, this is a limited edition Cognac perfect for your festive season.
The Pasquet family discovered organic farming practices in 1994 after one of their plots showed signs of ill health. Searching for a solution to revive the plot of vines, they explored their ancestral history to rediscover its organic farming methods and were immediately seduced by this new cultivation technique. After one year of testing the new method the family realised they had found a beautiful equilibrium not only in the ecosystem of their vines, but also in the Cognacs themselves and they never looked back. The entire vineyard was converted in 1995 and obtained the ‘Organic Agriculture’ label in 1998. House Pasquet continues to craft small-batch Cognacs that are the epitome of natural beauty and balance, produced through methods that respect the environment every step of the way.
History:
The Pasquet vineyard, located in the exceptional terroir of Grande Champagne, dates back to 1730 when it was under the ownership of the Serrillet family. The property was passed down through generations until it reached the Pasquet family in 1924 following the marriage of Miss Léonie Pasquet with Mr. Albert Brisson and was eventually inherited by their nephew, Jean-Luc Pasquet in 1970.
The house began selling bottles in 1977 with the creation of the Jean-Luc Pasquet brand. Its own production, along with inherited stock meant that it could offer a range of cognacs from four years aged to the very old and very rare “Uncle Albert” Cognac of 80 years of age.
Process:
Since 1994, the Pasquet vines have been cultivated according to the rules of organic farming, meaning no synthetic chemicals are involved in the process. Copper and sulphur-based products, alongside different plant manures are used to encourage the strengthening of the vine’s natural defenses.
Following the harvest, the grapes are directly pressed and the juice is transferred to vats for fermentation. The yeasts that are naturally found in the grapes ensure the fermentation of the wines and it is the use of these natural yeasts and the absence of sulphites which provide an additional guarantee of a true local product.
Once fermentation is complete the wines are distilled by the Pasquet house themselves in a traditional Charentais still using the double heating method, specific to the Cognac region. The eaux-de-vie is then allowed to mature in oak barrels exclusively from the Limousin forest, it is the subtle marriage of eaux-de-vie with wood and time that gives the Cognacs all their finesse and elegance.
Finally, eaux-de-vie from different vintages is selected and assembled in order to find the perfect balance and richness for these exquisite cognacs.
