Eye: A gentle amber color that immediately highlights the Cognac’s 25-year aging process.

The Finest of the Fins Bois - XO Cognac Le Maine Castay

Aged on average for 25 years, La Maine Castay XO Cognac is a prime example of a high quality XO from this region. What makes Le Maine Castay’s Cognacs so special is their unique farming technique; the biodiversity and ecosystems on their vineyards means their agriculture is not only environmentally-friendly, but improves the quality of their soil.

The presence of the red partridge on site (which incidentally features on the company’s logo), testifies to the quality of their cultivation methods. The Fins Bois region is known for producing round, supple eaux-de-vie that age quickly, producing intense flavors that are appreciated by Cognac drinkers all over the world.

Le Maine Castay, based in Torsac, is known for producing high quality Cognacs that beautifully reflect the particular characteristics of the Fins Bois region’s eaux-de-vie.

The chalky soil of the region usually produces a delicate aroma of freshly pressed grapes. However, this Very Old Cognac initially introduces an intense nose, with a second nose rich in dried fruit, including prunes and dried figs. Finally, aromas of cocoa and roasted spices round off this classic Cognac.

Presentation of the Bottle

A classic yet elegantly-shaped bottle that would fit nicely in any drinks cabinet or bar shelf. The bottle features Le Maine Castay’s majestic red partridge logo printed onto a charming charcoal grey label, reminiscent of the chalky soil with its rich minerals that create the beautiful blend of eaux-de-vie held within.

How to Enjoy

This Cognac is ideal to bring out after a dinner party, or perhaps just an evening shared with friends. It pairs perfectly with a cheese board, for example with an aged Comté or a Tomme, its gentle aromas of roasted cocoa and spices mean it could be drank alongside a rich chocolate mousse or even a slice of opulent opera cake!

Add a drop of water to release the delicate cocoa and spicy aromas to create a smoother drinking experience.
