Contrasts of Classic and Contemporary: Exsto Élixir Cognac
Guided by Exsto’s Master Blender Géraud Vallantin-Dulac, Exsto sommelier and aroma connoisseur Julie Dupouy has chosen to work with 15 small producers from the Cognac region, in the end selecting only just over a handful of eaux-de-vie for this blend. Exsto Élixir Cognac comprises eight eaux-de-vie chosen out of the rarest and oldest stock from Exsto’s producers, each of which has spent decades aging in rare, French oak barrels.
Together with Géraud, Julie has created a vital, complex blend which expresses the nuances of each eaux-de vie while synergising their distinctive qualities. Inspired by the diversity of the Cognac appellation, the skills of vineyard workers and long period of cask-ageing, Julie blends eaux de vie from each sub-appellation: aromatic selections from Grande and Petite Champagne, and floral eaux-de-vie from Borderies - the smallest of the six crus, famed for producing rare, smooth and voluptuous Cognacs with a delicate violet aroma. The result is a modern, elegant Cognac with a sensual, lively spirit.
Presentation of the Bottle
Delightfully modern and elegant, the Élixir Cognac by Exsto is presented in a square bottle with a heavy base and a stopper topped with natural wood. The bottle is decorated with a stylized topographical map, highlighting the connection between terroir and eaux-de-vie.
How to Serve Exsto Cognac Élixir
This Cognac is best enjoyed as a digestif with a drop of water to fully bring out the most delicate aromas. After pouring, allow your Cognac to rest for 30 seconds, letting the flavours concentrate and fully develop before taking a sip.
