Delamain XO Pale and Dry 50cl Cognac
The Pale and Dry XO, is a celebration of not only the creation but also the creators and their vision. Pursuing their mission to reveal the purest expression of the noble terrier of Grande Champagne, it is a 100% exclusive blend of eaux-de-vie. Its name “pale” is thanks to its natural pale color that is representative of the eaux-de-vie maturing in old casks and “dry” because it only has a natural sweetness. The blend at natural strength (around 50% ABV) is very slowly broken down to 40% with weak old Grande Champagne Cognacs at 15% which enrich the blend.
The Delamain family have been handcrafting their exceptional Cognac since 1824 and remain one of the last family-owned houses. They benefit from universal recognition as the leading specialist in the blending and breeding of fine old Cognac using only eau-de-vie from Grande Champagne - the first great growth of Cognac. This is then aged in seasoned oak casks for a minimum of two decades, before being blended and bottled under the control and expertise of the direct descendants of the founder James Delamain. The skill and knowledge passed down through the generations were honored by the International Spirits Challenge in 2007, which awarded Charles Braastad-Delamain the Trophy of Excellence in Craftsmanship. With history and expertise like this, it's easy to see how a display as wonderful as the Pale & Dry is in existence. A true representation of all that this wonderful house has to offer.
Presentation of the bottle
A nod to its pale and dry essence, the display of this Cognac is charmingly simple. White and gold tones allude to the “pale” oak cask aging, with the sky blue complementing its “dry” touch. A wonderful introduction to what lies beneath the surface, it demands a taste from the first glance. Finished in a presentation that complements the display beautifully, it’s a fine showcase down to the final detail. Certainly, one that every Cognac lover will appreciate.
How to enjoy
As an XO, this is a versatile selection. Enjoy it neat, with a dash of water to tease the aroma to the surface. Or, add into your favorite longer drink.

Early favorite, still a favorite
Delamain Pale & Dry was the first XO that really impressed me. Now it is out in a new version with an ABV of 42% This is a Grande Champagne age 22-28 years. As the name indicate it is quite bright in color. It is rich on the nose with a lot of fruit like citrus and apricot. There is also some vanilla....
