Eye: Deep, amber and garnet hue that is transparent and sparkling.

Nose: Delicate floral scents of jasmine and narcissus. The finale is spiced with warming nutmeg. The scents then gently develop into cedar wood.

Palate: The flavor will remain on the palate for well over an hour. The high viscosity of the Cognac appears on the tongue, due to high concentration during the aging process. A complex, full bodied and wholly delightful Cognac.

A Myriad of eaux-de-vie from the Bons Bois: Château des Plassons Cognac XO

We love to discover smaller producers doing great things behind closed cellar doors. And where better than the hundred-year-old winery at the Chateau des Plassons? This small artisan producer presents their XO Cognac, a beautiful example of their ability to blend Cognac from the finest growth areas.

Aged for 15 to 25 years in Limousin oak casks in their peaceful one hundred-year-old winery, the Château des Plassons XO Cognac is a selection over 10 different eaux-de-vie grown with Ugni Blanc grapes in the Bois Bois terroir, where the chateau itself is located.

This Cognac is, therefore, a beautiful allegory of their history.

Grown in a picturesque setting, the Chateau des Plassons vineyard was first established in the 17th century. The current vines are over 30 years old, and over time the vineyard has been extended considerably.

Set in an exceptional geological plateau of limestone, this picturesque setting also provides the perfect conditions for producing fine Cognac. Crafted by two young and passionate brothers, David and Julien Pannaud, they have drawn upon years of savoir-faire with a history dating all the way back to the 1500s.

The Pannaud brothers take time to allow the wine to ferment naturally, thanks to carefully maintaining high temperatures throughout the process. In the outbuildings of the chateau, they use a double distillation process in hundred-year-old Alambic Charentais stills made out of copper. This is the crucial point where the Cognac’s aromatic quality is decided.

Serving Suggestions

The Bons Bois terroir is renowned for its ability to age quickly. Let this very mature Cognac sit for 10 minutes, and then try it Cognac neat to begin with, in a snifter glass. You may also want to try it with an ice cube.

Presentation of the bottle

A simple 75cl decanter with a classic label. The Cognac speaks for itself.
