Eye: Light gold.

An oceanic Camus Cognac matured off the coast of the Atlantic Ocean

A unique concept for Cognac lovers that are eager to experiment, the Camus Île de Ré Cliffside Cellar Cognac is part of a series of unique Cognacs aged just meters away from the Atlantic Ocean in a cliffside damp cellar. The Cognac is matured across two different stages. Firstly, in a high-humidity cellar, then later it is transferred to toasted casks.

It is often found that the maturation process causes the sea flavor and aromas to disappear, and so Camus took inspiration from the whisky industry to solve the problem. Instead, they chose to add a “finish” where the Cognac was matured by the sea at the end.

While Cognac production is strict in terms of where grapes can be grown and distilled, the small island off the west coast of France technically lies within the Bois Ordinaires cru, making it the perfect place to create a one-of-a-kind, oceanic bottling.

For that reason, Camus has decided to defy the norm and mature their eaux-de-vie from the Bois Ordinaires a second time in the Fort de La Prée, an iconic building that lies in the spray of the Atlantic waves. Constructed in 1626, this star-shaped fort hangs off the edge of the cliff in one of the most picturesque settings that one could produce Cognac.

The maritime quality pairs beautifully with notes of orange, grape, salted caramel and wood spice.
