An Extra Old Fine Champagne Cognac
Created with eaux-de-vie descending from two premium crus, the Grande and Petite Champagne, the Audry XO Cognac is a unique insight into the precious treasures of the Audry Paradis cellar. Created from blends of the original reserve, as an Extra Old Cognac it has been impressively aged between 12 and 30 years. With multiple layers thanks to the finesse of the Fine Champagne, it is something to be savored right to the very end. The Grande and Petite Champagne are particularly celebrated thanks to the unique composition of the soil. Due to thousands of years of fossilization and its particular maritime climate, the soil has a high chalk and limestone content. This makes for faster drainage, and the vines are therefore naturally watered throughout the year. What’s more, the undulating hillsides of the Fine Champagne equal optimum exposure to sunlight. All of these factors make for a very refined and lengthy finish in the eaux-de-vie of the Audry Extra Old Cognac, which is made of more or less equal parts of spirit from each terroir.
How the Audry XO is made
After it was founded in 1878, Audry stopped selling Cognac in the 1950s. A number of larger stocks of older base spirits were kept in the cellar, in the hope that one day Audry would rise again as a Cognac house. For limited releases, Audry now dip into their precious Limousin and Tronçais oak casks to select the best of their eaux-de-vie from the Fine Champagne, which have been dormant; maturing beautifully for decades.
To create an aromatic grape distillate, they distill the Cognac in copper alambic Charentais stills by using a ‘swan’s neck’ pipe. It is this process that allows the spirit to maintain its Fine Champagne character.
The oak of the barrels plays an important role, as the wood is porous and allows for intermingling between spirit and tannin, with the help of oxidation from the surrounding atmosphere. Blended with incredible savoir-faire, they are then left for years and sometimes decades before bottling.

Audry XO
This is a new cognac to me and purchased along with another, XO Cognac, for comparison. I didn't get the spice notes on the nose, but that could just be me; Vanilla and floral notes abound.
I would say it's typical of a good quality Grand/Petit champagne Cognac; creamy and fulfilling with hints of toffee/caramel a little spice in the mouth, but not overpowering. A smooth and refined finish; not as long as I'd expected though.
Very good value and no surprise the French tried to keep it to themselves. Good to see a small producer now getting the recognition they deserve. Thanks CE.
I really enjoyed this Cognac. Would I buy it again? Well, I already have. ;-)
Money Well Spent
An absolute value for the money. The nose is bright and it has a finish that lasts for several moments. Palate definitely develops as it sits out and gets oxygen. I revisited it several times over 30-40 minutes and got a few new flavors each time. I wish it had just a bit more aromatics, but that's really the only negative I can think of. Would buy this again for sure!

Great surprise
Colour: golden amber
Nose: very smooth with notes of vanilla and spices; the alchool disappear really fast.
Palate: on the first sip notes of sweetness and spiciness with low traces of alchool and a very creamy sensation; on the second sip spices and wood become more powerfull, balancing perfectly with the sweet notes (vanilla) in a more complex taste.
Aftertaste: really long, less spicy and more fruity than the first taste.
One of the best XO ever tasted, sold at a really low price.
A pretty good XO
Nice color, rich on aroma, vanila easy to identify. Spices. A little bit too young to be an even better cognac, but this is very enjoyable. It is easy to reccommend this XO. But if you can afford it, you should rather choose Audry Memorial - that is a fantastic cognac
About Audry Cognac
When Time Magazine reported that ‘the best Cognac you’ve never heard of is Audry’ back in 2005, this small, artisan Cognac house was catapulted into the limelight. Since then, their products have become known in countries throughout the world and among some of the most prestigious restaurants – including those in Europe, Scandinavia and North America. However, just because a few years ago the name of Audry Cognac had not really been heard of outside of France, this does not mean that the house doesn’t have a long and illustrious history.
This family run Cognac house has a story that dates back to 1878, and despite keeping a series of older casks in chai, they stopped selling their bottles in 1950. This has arguably been the secret of their success; in 1978 when Bernard Boisson ignited the renaissance of the Audry Cognac brand, he had one of the most precious cellars of decades-old eaux-de-vie to dive into and begin blending exceptional Cognacs once more.
