XO: Aged 6 Years + On Ice & Neat & Food Pairing

XO stands for "Extra Old", and describes a Cognac consisting of eaux-de-vie that have been aged in oak barrels for a minimum of 6 years. Just like VS (Very Special) and VSOP (Very Superior Old Pale), Extra Old is another English expression, which shows the strong connection to foreign countries, especially Great Britain and America.

"XO" was coined by Cognac Hennessy and first used in 1870. Even though the youngest blend in an XO Cognac can be as young as six years, an XO usually has an average age of between 15 and 20 years, sometimes older. There is talk about raising the youngest component in an XO Cognac to a minimum of 10 years, but this hasn't officially happened yet. Today, as it stands, the minimum age for the youngest eau-de-vie in a blend to qualify as an XO is still six years. An XO Cognac can also be called “Old Réserve” or "Vieille Réserve". As XO is the final official age category, “Napoleon”, "Extra", "Hors d'Age", and "Tres Vieille Réserve", are designations that fall into the XO category, however, there can be important differences in quality and age.

Tasting review by Charpentron: Amber in color, this cognac represents all the expression of a Grande Champagne cognac.  A very fruity bouquet and taste - woody, yet subtle.

Tasting notes: Very fruity aromas, dry and some fried almonds, on the nose. On the palate this cognac is fresh, very round and with a long finish. The Rancio Charentais is very present, with slight spices here and there.

Tasting review by Claude Chatelier Cognac: Deep mahogany hue. Oak on the nose with ripe aromas of vanilla and dried flowers. Harmonious palate, initially reminiscent of plum and candied fruit, opens up to delicious hazelnut and fig flavors. Rancio Notes appear gradually, accompanied by keys of leather and tobacco. A very old cognac with lovely, lingering...

Fine Champagne with the intensity of the dried fruit and it's complex spiciness can be explored with a sample of walnuts, dried apricots and prunes. Richness of dried fruits on the palate, length in mouth is about 10 minutes.

The colour is soft golden, the nose rather balanced and full of flower notes, rather light but still spicy. Some hints of wood and sweet rancio. The taste is presented in quite a full, smooth way, intense fruits. The finish is pretty solid.
