Domaine de Birius VSOP Cognac: the Wonderful Fruits of Labor
Blended from eight vintages, the Domaine de Birius VSOP Cognac follows their trademark style of maturing a Cognac much longer than is required by law; this blend has been aged for at least 15 years in Limousin oak before being bottled. All the components of this blend have been produced by the Bouyer family and bottled at the Domaine, with Philippe Bouyer in charge of distillation and his daughter Elodie taking on the blending. The family craft their Cognac exclusively from Ugni Blanc grapes, sourced from the grassy limestone hills of the Petite Champagne region and grown using sustainable viticulture. In this case, the eaux-de-vie have been distilled on the lees for a wonderful depth of flavor, further enhanced by an extended maturation process. Expect a cornucopia of fruits and spices!
Covering 23 hectares of Petite Champagne vineyards at Biron in the Charente Maritime, the House of Cognac Birius is run by Anne and Philippe Bouyer, direct descendants of the original vineyard owners. The Domaine de Birius vineyard enjoys an ideal exposure with maximum sunshine and low summer rainfall. It covers 33 hectares of vines in Petite Champagne (2nd cru of the Cognac appellation characterized by clay-limestone soils on soft limestone subsoil). This favorable situation allows the range of grape varieties that grow here to express an exceptional potential for creating sumptuous Cognacs as well as wines, liqueurs and Pineau des Charentes.
