Description
A Cognac fit for the Gods: The VS “Selection” Apollon from Polignac Cognac
It is no surprise that Polignac’s noble heritage and award-winning blends create quality Cognacs. However, their new “Apollon” collection takes things to an even higher, simply aetherial level. Legend has it that the Polignac family are direct descendants of one of Apollo’s priests, the famous God of sun and light in Greek Mythology. Paying tribute to this mythological narrative, Polignac have created the VS “Selection” Apollon.
The Polignac brand is steeped in rich history, from creating Cognac’s for the Queen of England to using traditional methods for over 60 years. According to local folklore, Apollo’s priest and missionary would practice on the rock where the Polignac fortress now lies, in the heart of France.
The Polignac coat of arms today is symbolized by the griffin, a mythical creature that would guard Apollo’s treasure. With the sun and light being an integral part of cultivating the Ugni Blanc grapes distilled into its products, Polignac are seemingly blessed with the luck of the Gods, particularly with their VS Apollon Selection, which has won many awards.
The Cognac itself, thanks to its age and blend of 3 to 5-year-old eaux-de-vie, is beautifully light and refreshing. Revealing aromas of grape vine, peach and apricot flowers on the nose, with a delicately sweet hint of vanilla.
The sweet element is then transferred onto the palate, with vanilla notes dominating followed by a light finish of spices. This beautifully-blended beverage makes it the perfect ingredient in a summer cocktail, or simply over ice as a delightful digestif.

How to Serve
Serve over ice, neat or in a cocktail, the choice is yours! For a Summer barbecue or dinner party, why not serve up a champagne cocktail, or perhaps a “champagne bowler”, adding this VS Cognac to white or sparkling wine (preferably champagne of course), with fresh strawberries in the glass and a lemon zest to garnish.
