A 2016 Grande Champagne Cognac Finished in Sherry Casks
Oloroso means ‘scented’ in Spanish, and refers to the variation of fortified wine made in Jerez. It produces a nutty flavor that perfectly complements the likes of Cognac. For this reason, craft producers Philbert bring us the award-winning Philbert Grande Champagne 2016 Cognac Finished in Oloroso Sherry Casks. If you are looking for something rich and decadent, this is a very fine Cognac that takes its eaux-de-vie from the Grande Champagne in 2016. Philbert has reimagined the aging process by enriching the Cognac in aromas of toasted walnuts, almonds, and red berries. During the aging process, the wine from the Jerez Oloroso sherry infuses into the wood of the casks and imparts some flavor during the last few months of aging - the last 4 years. There is only a limited number of bottles, so once it’s gone - that’s it.
This is a non-chill filtered Cognac which no added caramel coloring, and has not been treated with low temperatures before bottling. The Grande Champagne is also known as the ‘Premier Cru’, and for being the best Cognac-producing region due to its high chalk content, undulating hills drenched in sunlight, and easy drainage on the soil. The Cognacs are very fine and take longer to age.
The Philbert brothers were the first in the region to use a rare cask finish in Oloroso Sherry Casks. They aim to shake up the usual rules of making Cognac and reinvent distillation and aging processes. Their single estate lies at the heart of the Fine Champagne, and they are a truly contemporary brand. The mountainous topography of the valley where their estate is located favors the flow of hot air through the vines, and its southwest-facing slopes increase sun exposure. The grapes, therefore, become richer and fuller.
