Eye: Sunset gold.

Nose: Florals rise from the glass - dandelion and lilies. Notes of almond and pear give the impression of freshly-baked tarte aux poires.

Palate: The taste is elegant and fine. Nuts and fruit blend perfectly, playing with hints of cardamom on the finish.

Description

Grands Domaines VS Cognac: Blended Sunshine

Aged for a minimum of two years in French oak, the Grands Domaines VS Cognac is a young single estate expression bursting with all the finest qualities you’d expect from an independent producer. Grands Domaines is the final blend created by the Cellar Master at Domaines Francis Abécassis. For this range of Cognac, the objective was to rediscover the delicacy of a winegrower’s Cognac, carefully selected by its creator. This union of eaux-de-vie wisely selected from a collection of lots in the Domaines Francis Abécassis cellars reveal flavors of orchard fruits combined with refined scents of almond, pear and summer florals.

Run by father and daughter team Francis and Elodie, this house produces only their single estate Cognac, with all steps of the process - growing, distillation, maturation, blending and bottling - controlled by the family. To enhance the characteristics of the terroir, each estate under their watchful eye has its own distillery and dedicated distiller that use specific and adapted methods of distillation. The Cellar Master meticulously selects eaux-de-vie with subtlety, bringing together different years, barrels and styles depending on the taste profile sought for each creation. Then he places the blend in large barrels for several months in the Blending Cellar. This additional time is particularly important to gently marry and harmonise the aromas, refining their elegance to achieve the desired radiance of the blend.
