Distillerie du Peyrat is doing just that with their Organic Selection collection. This single distillery produced VS is certified organic (as are 80% of their Cognacs), which means both planet and palate are protected from harsh chemicals that could impact your drinking experience. An exquisite blend of Petite Champagne, Fins Bois and Bons Bois eaux-de-vie, it is produced using 100% Ugni Blanc grapes. This particular VS is refreshing yet complex despite its relatively young age, the 4 years spent aging in old Limousin casks means it has had just enough time to develop a distinguished flavor profile that's light, lively and fresh.
The Peyrat estate is known in the Fins Bois terroir as pioneers in organic Cognac production, the family were quick to realize the rewards that could be reaped by growing organic grapes, resulting in increased quality and more intense aromas. The brand's environmental mission doesn't end there however, powered by solar energy, they insist on using local suppliers and their packaging is produced from recycled materials.
Unlike bigger brands, Peyrat opts to do things differently, turning their back on traditional methods of distillation and developing their own trademark "fatty distillation process" which offers a rounded mouthfeel with a pleasing "natural suppleness" to their eaux-de-vie. The nearby neighboring river provides a useful humidity to the estate's cellars, which proves essential in the maturation process to adding a level of finesse that other brands may never achieve.

How to Enjoy:
This light and lively VS could be enjoyed on its own as an appealing aperitif, or equally as a base spirit in a cocktail.
How about a refreshing Cognac Ginger lemonade? The citrus and spice would pair perfectly with the floral and fruity elements of the Organic Selection VS.
Ingredients:
- 2 thin slices of peeled ginger root, chopped
- ¾ ounce simple syrup
- ¾ ounce lemon juice
- 1½ ounces Organic Selection VS Cognac
- Ice
- 2 to 4 ounces sparkling water
- Mint, lemon wedge, and ginger for garnish
- - Muddle your ginger root in a cocktail shaker and add the simple syrup.
- - Add your lemon juice and Organic Selection VS.
- - Strain into a rocks or highball class filled with ice.
- - Top with soda/sparkling water and stir.
- - Garnish with a mint sprif, lemon wedge and a slice of ginger.
- - Enjoy!
