Description

Giboin Borderies Vintage 2002 Borderies Cognac

Discover the Giboin Vintage 2022 Borderies Cognac - a true gem from the heart of France, carefully crafted to perfection. Prepare to embark on a sensory journey that will delight your taste buds and leave you craving for more.

Nestled in the enchanting region of Borderies, where the rich soil and favorable climate create an ideal environment for growing exceptional grapes, this Cognac is a testament to the artistry and passion of the Giboin family. With their roots tracing back six generations, the Giboin family has mastered the craft of distillation, ensuring that each bottle is a testament to their unwavering dedication.

The 2002 vintage was a result of a meticulous process, starting with mechanical harvesting in the bountiful autumn of that year. The Ugni Blanc grape juice was fermented and then distilled, using traditional methods in a Charentais copper still. Under the watchful eye of François Giboin, the sixth-generation distiller, this exceptional spirit was brought to life.

For over two decades, this Cognac matured in a special oak cask, infusing it with nuanced flavors and complexity. The transition to the new cask, marked by the transference to barrel 14G253 in January 2023, has allowed for a seamless continuation of the aging process. No shortcuts were taken - the transfer was done gravity-fed, preserving the purity and integrity of the liquid.

One of the hallmarks of this extraordinary Cognac is its natural reduction, allowing the alcohol volume to gradually decrease over the years. From March 2003 to January 2023, the spirit matured gracefully, reaching its optimal strength of 43.4% ABV.

In January 2023, a final reduction of 10 points was performed, using meticulously filtered rainwater, resulting in a harmonious 43.4% ABV. Every step of the production process was executed with utmost care and respect for tradition. No cold stabilization or filtration took place, ensuring that the full depth of flavors and aromas remained intact. No sugar or caramel was added, allowing the natural essence of the Cognac to shine through.

Now, the time has come to savor the fruits of this labor of love. From June 2023 onwards, after a minimum of six months of further refinement, the bottling process from barrel 14G253 will commence. However, if patience isn't your strongest suit, fret not!

The Giboin Borderies 2002 Vintage Cognac is not just a spirit; it's an embodiment of heritage, craftsmanship, and the essence of Borderies. With each sip, you'll discover a symphony of flavors, from luscious fruits to delicate floral notes, accompanied by a velvety smoothness that dances on your palate.

Indulge in the timeless elegance and sophistication of this remarkable Cognac, whether as a cherished addition to your collection or a gift for someone special. With its unrivaled quality and rich history, the Giboin Borderies 2002 Vintage Cognac is a true testament to the mastery of the Giboin family, and an experience that transcends time. Cheers to the extraordinary!
