A New Cask-Finish Cognac aged in the Dordogne Region

The House of CAMUS has singlehandedly revived Cognac production in the forgotten area of the Perigord with their latest release - a single-cru Cognac from the last vineyards grown in the Dordogne region that borders the Charente. The CAMUS St Aulaye Special Finish Cognac originates from the two plots in Saint-Aulaye, which is one of the last villages in the Dordogne that is still part of the Cognac appellation, bordering the Bons Bois terroir.

In 1998, they began their mission to prevent the Appellation from disappearing in the beautiful area of Perigord, and set about acquiring planting rights for their vines. In 2014, CAMUS joined them in their mission, collaborating with the Town Council themselves.

The grape wine produced from grapes in the village of Saint-Aulaye are distilled over lees in small pot stills of 2500 liter capacity. The resulting eaux-de-vie are aged in fine grain oak casks from the La Double forest, which imparts soft and delicate tannins to the final distillate.

After the first part of the aging process, the Cognac is then transferred into first-fill Monbazillac sweet wine barrels of 225 liters as per traditional practice in the region. The small size of the casks allows for better interaction between the liquid and oak staves, facilitating the sweet and mellow aromas from the wood after the Monbazillac aging. The finish guarantees a high complexity of flavor, giving the Cognac its gorgeous golden color with flashes of amber.

This small batch St Aulaye Cognac is made in a limited allocation of 3000 bottles per year, each individually numbered.

Presentation of the Camus Saint Aulaye Cognac

The style of this small batch Cognac bottle confirms a distinctive and authentic design, preserving the iconic CAMUS bottle shape. The golden amber tones of the main label echo the colors of Monbazillac wine, while the light cream color of the bottle cap and the lower label evokes the hues of the clay soil where the grapes at the basis of this Cognac originate. It is proofed at 40% ABV.
