This second edition of Cask Experience takes the spirit of Cognac a little further afield than before. François Voyer Cask Experience N°2 Cognac has had a double maturation; first, 7 years were spent maturing the eaux-de-vie in Limousin oak barrels, before being transferred into old American whiskey barrels for another year. For Pierre Vaudon, Cellar Master and owner of Maison Voyer, this release is the result of numerous tastings and discussions in order to select precisely the type of cask which would perfectly highlight his spirit. The final selection was 35-litre ‘crocodile char’ (very heavy char) micro-casks which had previously held American rye whiskey from Reservoir Distillery, an artisanal whiskey producer based in Richmond, Virginia. This is a very limited release of only 180 bottles, bottled at a respectable strength of 43% ABV.
The Chauchet-Voyer family have been distilling and aging eaux-de-vie in oak barrels since the 1870s – for over five generations. This cask experiment is a wonderful example of how wood influences the aromas and flavor of Cognac, showing that new ideas can exist alongside tradition. Focusing on the Grande Champagne cru, the House of François Voyer works with numerous winegrowers in the area, as the Domaine itself is a small-scale producer with only 28 hectares of land. They are, however, dedicated to maintaining a sustainable agriculture approach to protect biodiversity and public health and was one of the first 20 domains to obtain the High Environmental Value (HEV) certification.
The François Voyer Cask Experience N°2 Cognac comes in a tall, slim bottle with black foil and an intricately designed label. The package is completed by an elegant presentation box featuring the Francois Voyer emblem in gold.
This powerful yet well-balanced expression is great served neat in a tulip glass, or in a tumbler with ice. It would also shine in any classic cocktail where you would usually use rye or bourbon; try it in an Old Fashioned or Manhattan.
On the nose, the whiskey barrel is immediately present. Sweet vanilla, fresh wood, notes of mirabelle and apple pie, very nice. On the palate, oak, apple and dried herbs. The finish is medium long, fruity and clearly dominated by the barrel. Conclusion: A beautiful cognac, with clear whiskey e...
