Nose: aromas of white fruits and pineapple offer a pleasant preamble to the tasting.

Palate: peppery and minty flavors mingle with those of cucumber and watermelon. Lychee and vanilla accompany the delicate melody. A fine iodine and vegetal touch completes the work, leaving a nice bitterness that will echo the dishes that accompany it.

Description

The first nigori (=unfiltered) produced by the brewery Les Larmes du Levant, the Tenshin immediately seduced the public with its freshness and intensity. Certainly one of the most beautiful vintages of the year.

A real taste sensation! Tenshin Sake is a sake from the Usu Nigori category. 

Only limited to 400 bottles it is a special sake with delicate aromatic freshness. Its vivid body and minerality, characteristic of traditional sakes, opens up to pronounce an exciting tension on the palate.

The ori is the concentrate of rice and unfermented matter that resides at the bottom of the vat at the end of the fermentations. It is very powerful, concentrated and acidic, and cannot be used on its own. To create the Tenshin, the brewmaster added only 12cl of ori to a 300L tank of filtered sake! After the main fermentation, the sake is semi-filtered. The goal here is to achieve that a fine amount of lees remain in the liquid. Having a small number of lees in the bottle gives the sake a richer flavor profile. A freshness brought by an acidity close to the one found in grapes. It also gives it a vibrant side. 

Because if the beauty of this sake does not need any to reveal itself, it can be enjoyed with an assortment of can be enjoyed with an assortment of dishes. Among these, tzatziki, almonds, dried fruits carpaccio, split pea soup or oysters will do wonders. Serve it hot to be in perfect symbiosis with in perfect harmony with the food. It is very easy to drink and best served as an aperitif. It can be enjoyed at various temperatures ranging from 5 to 70°. It is a unique tasting experience at any temperature.
