Situated in the Auvergne-Rhône-Alpes region of France, Les Larmes du Levant is a distillery that respects and embraces traditional Japanese sake brewing. Grégoire Boeuf, its creator, traveled to Japan to learn the techniques firsthand, resulting in sakes that offer an elegant fusion of French terroir and Japanese tradition.
Production Process: The Art of Sake Brewing
Le Vent is a sake that elegantly combines the sweetness of the Yamadanishiki sake rice variety with a hint of acidity, offering a subtle yet evocative body. This unique sake is brewed from imported Japanese rice, showcasing the brewer's knowledge and respect for the basic ingredient. It's a Junmai (pure rice) category sake, polished to a rate of 50%, and contains 15.4% alcohol. It is a beautifully balanced drink, sitting comfortably between sweet and dry sakes. Free from sulfites, this sake possesses a commendable conservation period, and the 72cl countenance makes it perfect for sharing with friends or loved ones.
