Eye: Deep copper. 

Nose: This rum has a generous nose with red fruit fragrances and hints of delicate wood.

Palate: Exceptional balance and integrity, with notes of stewed red fruits and fresh morello cherries to give it a delicate edge. Fine hints of spices, sweet candied fruit and Oloroso sherry notes lead into a long and complex finish. 


Saison Rum Sherry Cask: Well-Traveled and Distinguished

For this outstanding aged expression, Master Blender Jerome Tessendier has made a meticulous selection of distillates from two distinct terroirs in the Caribbean Islands: Barbados and Trinidad. Showcasing the style of these terroirs in a perfect balance (40% Barbados, 60% Trinidad), the Saison Rum Sherry Cask is a spirit with outstanding richness and intensity from the distillation of molasses in pot stills, combined with the delicacy and lightness from the sugarcane distillation in columns.

After distillation, the two batches of rums from Trinidad and Barbados are put into American bourbon barrels and aged for five years in the Caribbean. After this, they are transferred to Charente, where they will mature for another 12 months in ex-Cognac casks before being married into barrels that have previously contained Pedro Ximenes sherry. As a result of this unique process, the rum develops outstanding fruity aromas and a natural sweetness.

Serving Suggestion

Although this aged rum is great served on its own or over ice, we think its rich fruity notes stand out beautifully in a Perfect Rum Manhattan:

  • 60ml Saison Sherry Cask Rum 
  • 15ml sweet vermouth
  • 15ml extra dry vermouth
  • 5ml maraschino syrup (from Luxardo Maraschino Cherry jar)
  • 3 dashes Angostura Bitters

Stir all ingredients in a mixing glass with ice, then strain into a chilled coupette glass. Gently zest a piece of orange peel over the glass and discard, before garnishing the drink with two cherries on a cocktail stick.
