Sweet Success After a Difficult Year: 1991 Vintage Cognac from Hine
This Hine 1991 Vintage Cognac is the product of one year’s harvest in Grande Champagne. Only the most exceptional, stand-out harvests result in a Hine Vintage expression, and this one is particularly notable. 1991 is famous in France as a devastating year for wine; the year that springtime frosts and late summer rains combined to eradicate much of the harvest. Although the yields were low, the remaining Ugni Blanc grapes from Grande Champagne created such elegant, sophisticated eaux-de-vie that Bernard Hine, sixth-generation company director of Hine Cognac, could not resist releasing this vintage.
Distilled with the lees and aged in fine-grained French oak, this is a Cognac that promises depth and complexity. Hine’s centuries-old cellars in Jarnac provide a high-humidity environment, perfect for the slow maturation of fine eaux-de-vie. While the largest producers in Cognac focus entirely on the creation of blended ages, Hine have for years dedicated themselves to releasing unusual vintages to showcase the diversity of flavour brought by each grape harvest. Bernard Hine personally selects each of these for bottling, proudly carrying on the traditions of his ancestors year after year.

How to Enjoy Hine Vintage 1991 Cognac
This rare vintage is best enjoyed in a tulip glass to fully appreciate its delicate citrus aromas. A small splash of mineral water can also be beneficial. This Cognac is an excellent pairing for fresh, fruity desserts like tarte aux framboises (raspberry tart) or vanilla-poached pears.

If you want a 1st class cognac, look no further
Just opened the 1991 vintage and from the first pour you can see the quality through the legs falling down the glass. This is one of the smoothest cognacs I have ever tried. You can taste the the underlying citrus with every taste. Just a remarkable cognac.
О Hine Cognac
Located in the heart of the Grande Champagne, the premium wine growing area of the Cognac region, the house of Hine has been producing some of the most exquisite Cognacs for six generations, when it was better known as T Hine & Co Cognac. The estate boasts an exceptional 173 acres of vineyards, and the house has a very special tradition of producing relatively small quantities - but with a very high standard in quality. One of their trademarks is to store their vintage casks in damp cellars in Bristol, England. This way, the Thomas Hine Cognac goes through a uniquely different ageing process due to the humidity of the seaside town, which differs somewhat to that of the southwestern coast of France. These highly priced vintage bottles are called “Hine Early-Landed Vintage Cognac”.
