After the main fermentation, the sake is semi-filtered. The goal here is to achieve that a fine amount of lees remain in the liquid. Having a small number of lees in the bottle gives the sake a richer flavor profile. A freshness brought by an acidity close to the one found in grapes. It also gives it a vibrant side.
