Prime Cellar Exclusive!

I've seen several releases like this from REMY, and after a few years looking at a few, I thought it was the best time, especially after a new year, to try this! The Presentation of this VSOP, is definitely a step up form the regular VSOP from Remy, in every way! the Cellar itself is known to create fine flavors, I am a huge fan of the VSOP, and I had to give this one a try! I bought this in a 1L form, The box speaks for itself, exclusive, limited, and exquisite, I adore this Cognac! The Bottle is, similar to the VSOP, the labels are of course, different for this wonderful and amazing Elixir!
Every detail stands out on this box and bottle, and the best is yet to arrive here! after opening the box and undoing the bottle seal, aromas arrive and are powerful! Nose is as follows, Powerful Floral notes, with spice, and of course, Vanilla, caramel and apple, a small roasted note, and a twist of citrus, and dare I say a hint of creamy coconut!? Pouring around 1.5oz into my proper glass, neat and room temperature. I let this sit for a good moment. As I know this is a magnificent blend of Eau-de-vie from Petite Champagne and Grande Champagne, the best of the best of Terroir in Cognac, France! The Palate is as follows to the best of my taste buds can deliver, A delicious, and balanced, smooth and not really a burn at all if you let it sit as it should, supple apple, and vanilla, oak and a hint of spice, and a creamy caramel like, toasted note of bread at the end, with a long, and amazing, savory finish, that sets the standard for a limited release cognac! compared to VSOP, there is more supple, and more creamy texture, the spice is there however it is the Floral and Vanilla and apple notes that drive this Cognac to be an example of Remy Martin and their fine selection process!!! Definitely different from the Original VSOP by a margin! This Cognac Stands out! and now a personal favorite! It is so smooth and it is filled with flavor it will leave you wanting more! Served neat and let it air out, you will not go wrong at all! a dash of water if you are short of time to release the amazing notes from this Cognac! Serve neat and no shots! I am sure this would make a great mixer to some very scrumptious drinks! A must try or buy if you are into Remy or into Limited Releases!

A small sip: Allow your taste buds in the various areas of your mouth to distinguish the different flavours. This part of cognac tasting is described as ‘the palate’. Don’t just swallow it down; allow the liquid to touch all the regions of the mouth. Doing this is necessary as the taste buds pick up contrasting flavours in the different areas of the mouth; on the tip of your tongue to the sides, for example. Take a tiny sip to prep your palate for the sensory experience to come. Take a second larger sip, and gently roll the cognac around, etting it come into contact with every corner of your mouth. Focus on the perceived textural sensations. Are the sensations round and rich or fresh and elegant? Is the overall mouthfeel intense, balanced, disjointed, or lacking presence? In short, how does the cognac feel in your mouth?
