Passionate cognac enthusiast from Norway
Spicy surprise
This is my second cognac from this producer, I was somewhat disappointed by the XO, so it will be interesting to see how I experience this 15-30 year old Grande Champagne.
This cognac has a rather dark color, it has stayed as much as four years in new casks, and there are some color added. It is rich and delicate on the nose, here I find both floral notes and some darker notes like tobacco and exclusive wood. In mouth it is quite spicy, I find it interesting, and I notice that my smiling muscles are starting to move. The body has both volume and length. I think this cognac would have benefited from some higher degree and even some more age. The finish is long, you can feel the spicy notes a long time after your glass is empty. For me this was a positive surprise and a fun cognac to taste. I would not hesitate to drink it again.

Mouth
A small sip: Allow your taste buds in the various areas of your mouth to distinguish the different flavours. This part of cognac tasting is described as ‘the palate’. Don’t just swallow it down; allow the liquid to touch all the regions of the mouth. Doing this is necessary as the taste buds pick up contrasting flavours in the different areas of the mouth; on the tip of your tongue to the sides, for example. Take a tiny sip to prep your palate for the sensory experience to come. Take a second larger sip, and gently roll the cognac around, etting it come into contact with every corner of your mouth. Focus on the perceived textural sensations. Are the sensations round and rich or fresh and elegant? Is the overall mouthfeel intense, balanced, disjointed, or lacking presence? In short, how does the cognac feel in your mouth?
