Bio:
After decades of drinking lots of whisky and not enough cognac, I have spent the last few years drinking quite a lot of both (and some Armagnac and Calvados too). I don’t look for whisky substitutes or comparisons in cognac, they are quite different spirits and should be treated as such. Both are magnificent I think.

Classy
Exceptional 90 /100
I’m tasting this from three small samples.
The initial nose is already showing class with deep plummy notes, some sweet hints of cocoa and dried fruits, tobacco leaf is there too. It’s surprisingly gentle, but really lovely.
Initially on the palate there a burst of fruit that quickly settles into more savoury flavours with rolling spices, traces of unsweetened chocolate, a raisiny background and some leathery notes.
Long, drying finish with tobacco and leather and soft spices. Some cocoa comes through. A little bitter but not in an unpleasant way.
This is really sophisticated stuff. It has the feel of old cognac and a strong personality. It’s not trying to please you, but it can’t fail to. That said, if you like your cognac sweet, maybe this is not for you.

A small sip: Allow your taste buds in the various areas of your mouth to distinguish the different flavours. This part of cognac tasting is described as ‘the palate’. Don’t just swallow it down; allow the liquid to touch all the regions of the mouth. Doing this is necessary as the taste buds pick up contrasting flavours in the different areas of the mouth; on the tip of your tongue to the sides, for example. Take a tiny sip to prep your palate for the sensory experience to come. Take a second larger sip, and gently roll the cognac around, etting it come into contact with every corner of your mouth. Focus on the perceived textural sensations. Are the sensations round and rich or fresh and elegant? Is the overall mouthfeel intense, balanced, disjointed, or lacking presence? In short, how does the cognac feel in your mouth?
