Origin: A Passion Project in the Southwest
The Maison Victors Distillery, situated just outside of Toulouse in the beautiful Southwest of France, is the brainchild of Gilles Victors. With over 15 years of experience as a knifemaker and a love for spirits, Gilles pursued technical courses in French and Scottish distilleries after being captivated by whisky masterclasses. Today, his distillery is a testament to his dedication to purity, sustainability, and local sourcing, creating truly remarkable gins and pastis. It's also worth noting that the distillery's name comes from its unique construction – it's built entirely from Maison Victors!
Production Process: Slow Infusion for Maximum Flavor
Pink Pastaga is the result of a slow and meticulous infusion process, with the spirit being aged for an extended period in vats. This process allows for the full expression of the unique citrus notes brought about by the Timut pepper, which is carefully macerated to maximize its flavor.
