Paul Giraud Vieille Réserve Cognac: sweet and smooth Grande Champagne
The Paul Giraud estate is well known for not only its premier cru eaux-de-vie, but equally, its emphasis on traditional methods of production, from hand-picking the grapes to using traditional copper alembic stills for distillation. The estate uses organic farming techniques, meaning there are no chemicals or pesticides in their eaux-de-vie, producing a purer, more authentic flavor profile and a distinctive depth of character.
The Paul Giraud Cognac Vieille Reserve is a prime example of hard work paying off, a high-quality 25-year-old XO Cognac offering a sweet and smooth experience with every single sip. The brand has won many awards as an independent winegrower, its estate is small, only 35 hectares, but mighty in terms of the intense flavors it produces.
This particular Grande Champagne blend boasts that classic rancio character typically found in older eaux-de-vie, it holds aromas of fresh stone fruits such as apricot and peach and caramelized plums. It has a very supple yet rich flavor profile, having been left to mature for around 25 years.
What makes this Cognac so unique is its uncharacteristic sweetness for a Cognac of this age, its caramel notes mellow out the sharp stone fruits whilst balancing out the oaky aromas produced from its 25 years in Limousin casks.
Bold baking spices permeate on both nose and palate, including vanilla and clove. Honey and mandarin peel add another element to this Vieille Reserve, a truly complex and sensory adventure.
How to Enjoy
Enjoy this Vieille Reserve neat in a classic balloon glass, slightly warmed by the hands and sipped slowly to savor the sweet and mellow flavor profile that evolves as you make your way down the glass.

Excellence in a cognac
I waited until the second bottle to review this cognac. Some cognacs are like a weekend fling or a summer romance: up-front fireworks and a finish that leaves you breathless. I like that sometimes. But this cognac is one for a long-term relationship. It has great aromatics, weight in the right places, and a mellow not-too-sweet finish that evokes fond memories of good times. A just reward in this too-short life.

This sample is something what exactly needed to taste for everyone who is came in cognac world. I was surprised of aroma and palate. It had forced me to be in up mood and thinking about pleasant things. Have to return again and again...

If you truly enjoy the taste of caramel with a touch of sweetness, then I suggest this elixir of the Gods. I enjoy sipping good cognacs and by far this is a great tasting cognac. Add 1 cube of Ice with a lemon twist and you have the taste of heaven in your hands.
Over Paul Giraud
The location of Cognac Giraud is in the prime "1er Cru" cognac growing area of the Grande Champagne, which allows Giraud to produce an exquisite cognac range, from a 6-year old to a 50-year old cognac. The estate is based in Bouteville, and with some additional vineyards in St. Même-les-Carrières, the growing area comes to 35 hectares. The cognac house combines a strong belief in traditional methods with a modern take on cognac production, avoiding any kinds of chemicals or pesticides in their agriculture and coloring additives in the final blends. The work on the plants as well as the actual harvest of the grapes is still done manually, assuring the best possible treatment of the grapes in order to generate the highest quality for the eau-de-vie. Also, Giraud only produces pure vintage cognacs, which means that they never blend eaux-de-vie from different years, but trust in the fine differences between the annual vintages.
