Based out of Seattle, Washington, Jesse Cyr is an award winning bartender. His credentials include being the General Manager of internationally acclaimed bar Rob Roy as well as Head Mixologist at The Charter Hotel by Hilton. Currently, Jesse is the Beverage Manager for the Fairmont Olympic Hotel in downtown Seattle. He has had the opportunity to work for several global brands creating various menus and cocktails with their spirits. He is also active in the competition scene being a former national finalist in the Woodford Reserve Manhattan Experience, the National Sherry Wine Cocktail Competition, and the Bols Around the World global competition.

Absolutely Worth the Price

Navarre lives up to the hype, in my opinion. It's always great to find a producer that isn't using any additives, but letting the cognac also naturally reduce in proof is an amazing ability. The Cravache d'Or is certainly the entry level bottle from Navarre, but that doesn't mean it's one dimensional or lacking. There's a very even balance of spice and fruit, backed up by lightly toasted wood and gentle white flowers. There's some great honey sweetness which compliments burnt orange and stone fruits. I didn't get a lot of rancio, more like a brief encounter.

This cognac is absolutely worth the price. I got it here on sale for $82. Even for it's usual price of $110, I'd buy this one again. It's a cognac that knows exactly what it is. There's a sharp attack on your palate in the way that the flavors are pointed and precise, very direct. It finishes with a fairly long barrel spice flavor along with some wonderful floral notes. You would think with the extra 5% ABV, it would have a good amount of extra punch. I didn't really notice it too much, but rather I think it helped focus all the flavors into a sharper flavor profile. I can't wait to try the rest of the lineup soon!!

A small sip: Allow your taste buds in the various areas of your mouth to distinguish the different flavours. This part of cognac tasting is described as ‘the palate’. Don’t just swallow it down; allow the liquid to touch all the regions of the mouth. Doing this is necessary as the taste buds pick up contrasting flavours in the different areas of the mouth; on the tip of your tongue to the sides, for example. Take a tiny sip to prep your palate for the sensory experience to come. Take a second larger sip, and gently roll the cognac around, etting it come into contact with every corner of your mouth. Focus on the perceived textural sensations. Are the sensations round and rich or fresh and elegant? Is the overall mouthfeel intense, balanced, disjointed, or lacking presence? In short, how does the cognac feel in your mouth?

Quite simply, what do you taste as you gently roll the cognac around in your mouth? Pay close attention to any flavors of fruits, flowers, oak, and spices - or a complex combination of those elements. Are the flavors cohesive with the Nose and the Mouth, giving a sense of balance and complexity?
