Trilogie Vol. 4 Cognac marks the latest chapter in the IWFS exclusive release series—this time crafted in partnership with Cognac Tiffon, a historic, family-run house in Jarnac with roots dating back to the 19th century. Together with IWFS, Tiffon selected a 30-year-old multi-cru Cognac, matured in a very humid riverside cellar, giving the spirit its depth and roundness.

Color: Warm amber with golden reflections

Nose: Refined, measured, quietly confident. It begins somewhat closed, then gradually opens up to reveal a mix of exotic spice and subtle warmth. Notes of dried orange peel, candied fruits, fragrant sandalwood, and gentle florals unfold with air, leading to a layered and engaging aromatic profile. There’s an elegant restraint here that rewards patience. A classy nose.

Palate: The first sip reveals a very “gourmand” character: layers of hazelnuts, almonds, and frangipane glide across the palate. There is a smooth, dessert pastry-like richness. The oak influence is nicely integrated, supportive rather than dominant, fine rather than firm, adding structure and grip without bitterness. While there’s a touch of warmth on the initial sip, it quickly softens and never detracts from the experience. The texture is round and polished, with a mouth-coating presence. The elevated alcohol level adds structure, drive, and body. The alliance between candied fruit, orange peel, spice, and oak is well-measured.

Finish: Long and lingering, the finish delivers on toasted nuts, soft spice, and a trace of rancio. It evolves slowly, in good balance and full of depth.

Aged in a used Tronçais oak barrel (fine to medium grain, light toast), the Cognac evolved gently over time, without dominant wood notes. Bottled at 45% ABV, it remains natural in color, with no additives, offering full aromatic and textural integrity.

Trilogie Vol. 4 Cognac is the latest edition in the IWFS exclusive release Cognac series and marks a new chapter for the collection. This time, the partner is Cognac Tiffon, a historic family-run house based in Jarnac with deep expertise and roots stretching back to the 19th century. For this release, Tiffon together with the IWFS have selected a mature Cognac aged for 30 years in a very humid cellar, helping the spirit develop depth and roundness over time. Tiffon’s chais are situated right on the banks of the Charente River, which undoubtedly contributes to the treasured humid cellar conditions. Vol. 4 is a multi-cru Cognac (AOC Cognac), meaning it is a blend of eaux-de-vie coming from several of Cognac’s crus.

The Cognac was aged in a used oak barrel made from oak coming from the Tronçais forest (as opposed to coming from the Limousin forest, which is a more prevalent oak provenance for Cognac). The barrel is of a fine to medium grain oak and received only a light toast, which allowed the Cognac to breathe and evolve gently over the years without an overt tannic oak influence. The result is a spirit that showcases the influence of time and environment, rather than front and center woodiness. Bottled at 45% ABV, this Cognac remains at natural color with no additives, ensuring a Cognac with full aromatic integrity and texture.

On the nose, the Cognac is refined and quietly expressive—not showy, but rewarding for those who wait. It begins with a reserved profile that gradually unfurls to reveal exotic spice, dried fruits, and a soft floral lift. On the palate, it's gourmet-like, with rich notes of toasted hazelnut, almond pastry, and frangipane, backed by smooth tannins and well-integrated oak. Cognac Tiffon

Cognac Tiffon is a family-run house that has been crafting Cognac since 1875. Based in Jarnac, right on the banks of the Charente River, Tiffon is known for its commitment to tradition and Cognac craftsmanship, with somewhat of a speciality in making complex blends. With deep French and Norwegian roots, the house takes pride in overseeing every step of production, from grape to glass, ensuring that each bottle tells a story of quality, care, and artisanal French savoir-faire.

History

The journey begins in the 1870s with Médéric Tiffon, who began distilling eaux-de-vie in Jarnac. In 1913, his niece Edith married Sverre Braastad, a young Norwegian who would soon become a driving force behind the brand. The couple took over the business in 1919, and the Braastad family has been at the helm ever since. Today, they operate from the picturesque Château de Triac, a historic estate dating back to the 11th century, blending old-world charm with generations of expertise.

Vines, Distillation, & Aging

Tiffon owns a 40-hectare vineyard split between two top crus: Grande Champagne and Fins Bois. Grande Champagne is famous for its chalky soils that produce refined, long-aging eaux-de-vie, while Fins Bois adds roundness and fruit-forward character. As a négociant-propriétaire, Tiffon is not only able to grow and distill their own wines but also source exceptional lots of eaux-de-vie or wines from other crus. This flexibility allows the house to create unique blends and limited editions that highlight the diversity of the Cognac region. Tiffon proudly produces some of the region’s most complete, complex, and balanced blends.

The distillation process at Tiffon is rooted in tradition. In their distillery in Mainxe, Cognac is crafted using the double distillation method in classic copper pot stills. With ten 25-hectoliter stills in operation, the distillation team carefully transforms wine into crystal-clear eaux-de-vie. This slow, deliberate process concentrates the essence of the grape, setting a strong base for the oak aging period to come.

Aging is where time is left to work its magic. At Tiffon, eaux-de-vie mature in oak barrels stored in humid cellars along the Charente River. This natural moisture helps the spirit develop slowly, enhancing depth, smoothness, and complexity. The mouthfeels of Cognacs coming from humid cellars are remarkably different from that of dry cellars. They are inherently more gourmand, with more richness, roundness, and texture. The cellar holds treasures that have aged for decades—some over stretching back to the early 1900s—gaining rich aromas of spice, dried fruits, and the famed Cognac "rancio" character. It’s a place where patience truly pays off.

Blending & Bottling

At Tiffon, blending is somewhat of a meticulous artform. The master blender selects and marries eaux-de-vie from different crus and vintages to create smooth, expressive Cognacs with signature style. Bottling is done in-house to maintain full control over the final product, from filling to labeling.
