We’ve never met a Jean Fillioux Cognac we didn’t love. And now again we’ve fallen under the charms of this iconic house’s Cognac with this extremely limited exclusive Hors d’Age edition, which is a blend of three different eaux-de-vie bottled at 41% abv, each orbiting at the three decade age. The eaux-de-vie come from the estate’s temperate cellars and spent 1-3 years in new Limousin oak, with a medium+ chauffe. But fascinatingly, the oak here plays only a supporting role, letting the fruit and supreme elegance of the Grande Champagne shine.
Initial nose and taste presents a lot of various fruit flavors and a medium sweetness. The finish presents some spice, wood, and maybe vanilla. It's a good cognac, but the price warrants something a little more exceptional. My only other quibble is that the wax seal was very dry and hard. I really...
