We present to you a blend of three remarkable vintages from the early 2000s, which when combined birth a synergistic Borderies Cognac. This modern-day Cognac blend has then been blessed with the flavors of the past thanks to spending time aging in an exceptionally old cask of between 50 and 70 years old.

TASTING NOTES
Eye: Luminous gold with hints of amber
Nose: Aromas of banana, vanilla and a subtle hint of spices.
Palate: A complex palate with many flavors, it takes time for these flavors to develop and for the fruit-forward and Madagasacan pepper notes to reveal themselves.

The house of Giboin has a history in the region stretching back to 1880, and all three of the vintages in this blend were produced from its l’Hermitage vineyard located in the Borderies cru. The two most dominant eaux-de-vie in the blend are from the years 2005 and 2009, each representing 42% of the final blend. Immediately out of the alambic, each eau-de-vie spent 12 months aging in new oak before being transferred to barrels of 30+ years of age for the 2005 vintage and around 10 years of age for the 2009 vintage. The final vintage in the blend comes from the year 2002, making up the remaining 16% of the blend. It was discovered in a very small barrel of just 50 liters by Giboin, as he was unearthing dusty treasures in the Giboin cellars. The wooded and spiced aromas of this 2002 eau-de-vie were significantly more concentrated in this barrel, and it is this vintage that has given the blend its particularity.
In the early months of 2021, the three vintages were blended into a single 180 liter barrel of 50 to 70 years of age. This dated cask that the Borderies blend finished maturing in was purchased by Camille Lambert, the great grandfather of Théophile and Pierre-Louis Giboin who are currently at the helm of the house. Camille Lambert headed the distillery from 1920 to 1963 and so the cask would have been bought at some point during this 43 year period. The barrel was first discovered in the oldest construction of the l’Hermitage domaine, which was built back in 1795 right after the French revolution. The Giboin family is steeped in rich history and although their L’ESSENTIEL is a 21st century Cognac, its aromas invite us to ralentir, réfléchir, réunir - slow down, reflect and reconnect with these bygone times.
L’Hermitage is located in the Pays-Bas section of the Borderies region. Here the terrain consists of dark clay topsoil with a gypsum subsoil, and the climate is particularly humid. These conditions are favorable for producing Cognacs of fruity expression and it is thanks to this that the Giboin L’ESSENTIEL Très Vieux Borderies Cognac presents a seductive mix of banana, vanilla and spiced aromas. This Cognac is also completely natural, containing no coloring or artificial flavors and having undergone no chill filtering, or any filtration whatsoever. The three vintages were blended together on March 23rd 2021 and transferred into the very old 180 liter barrel, a small reduction was performed using naturally-filtered rainwater to bring the alcohol volume down to between 47 and 48%. The final reduction to 46.5% ABV was done in September 2021.
Only 100 bottles of this Ugni Blanc Cognac were produced, so we advise acting fast if you wish to experience this eaux-de-vie that blends the aromas of modern day with that of Giboin’s past.
