A limited edition Très Vieux cognac from the Premier Cru
Forming part of Maxime Trijol’s exclusive Dry Collection crafted from the Premier Cru, the No1. Très Vieux Grande Champagne is an exceptional batch, meticulously selected by the family over the years. This Cognac falls into the Very Old denomination. As with all of their eaux-de-vie, House Trijol aims to use blends from older barrels than the age denomination suggests. This spirit is the synthesis of 160 years of craft and six generations of family passion, delivering a Cognac with plenty of roundness and a lengthy finish. A harmonious expression to delight any connoisseur.
To create the Dry Collection Lot 1 Très Vieux Cognac Grande Champagne, Ugni Blanc grapes from the Premier Cru are crushed and pressed between September and October, and juices fermented without sulfur dioxide. The wine is then kept upon the lees, and according to AOC Cognac rules, from March 31st onwards the wine process is transformed into Cognac over double distillation. The Charente method is preferred, which consists of double heating in the traditional pot still. It is then matured in Limousin French oak barrels.
